Why Cod Is a Great Choice for Family Meals

Cod is light yet satisfying, making it ideal for a meal that feels substantial without being heavy. Its mild taste makes it approachable for kids and adults alike, and it pairs beautifully with bright citrus, fresh herbs, and simple sides like roasted vegetables or buttered potatoes. Plus, it cooks quickly, which is perfect for weeknights when time is limited.

Ingredients (Serves 4–6)

  • 2 lbs fresh cod fillets - get them here: https://cityseafoodstl.com/products/cod

  • 3 tablespoons olive oil or melted butter

  • 3 cloves garlic, minced

  • Zest and juice of 1 lemon

  • ½ cup freshly grated Parmesan cheese

  • ½ cup panko breadcrumbs

  • 2 tablespoons fresh parsley, chopped

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • Salt and freshly ground black pepper to taste

  • Lemon wedges for serving

Optional sides:

  • Roasted baby potatoes

  • Steamed green beans or asparagus

  • Garden salad with vinaigrette

Instructions

1. Preheat and Prepare

Preheat your oven to 400°F. Lightly grease a baking dish large enough to hold the cod in a single layer.

Pat the cod fillets dry with paper towels. This helps the topping adhere and ensures a perfectly flaky texture.

2. Season the Fish

Place the fillets in the baking dish. Drizzle with olive oil or melted butter. Sprinkle evenly with salt, pepper, paprika, and oregano.

3. Make the Lemon Herb Topping

In a small bowl, combine:

  • Parmesan cheese

  • Panko breadcrumbs

  • Garlic

  • Lemon zest

  • Fresh parsley

Mix until well combined. The mixture should be slightly crumbly but moist from the cheese and zest.

4. Top and Bake

Press the breadcrumb mixture evenly over each fillet.

Bake uncovered for 12 to 15 minutes, depending on thickness. Cod is done when it flakes easily with a fork and reaches an internal temperature of 145°F. For a golden crust, broil for an additional 1 to 2 minutes at the end.

5. Finish with Fresh Lemon

Remove from oven and squeeze fresh lemon juice over the top. Serve immediately with extra lemon wedges on the side.

Serving Ideas for a Complete Meal

Pair the baked cod with:

  • Roasted potatoes tossed in olive oil and rosemary

  • Steamed vegetables with a squeeze of lemon

  • Warm crusty bread

  • A simple dessert like bread pudding or fruit crisp

Ordering premium cod from City Seafood makes this meal even better — fresh, flavorful, and convenient.
