Trout is a great choice as it doesn't have quite as strong of a flavor profile, and lacks some of the fattiness of salmon, but retains the smoke flavor that makes salmon such a fantastic choice for smoking. Great to use in place of smoked salmon in dips, salads, hors d'oeuvres, or just on its own. Pairs well with crackers, cream cheese, and capers.
