For the Halibut:

  • 2 cups fresh baby spinach

  • 1 zucchini, sliced into half-moons

  • 1 red bell pepper, thinly sliced

  • 1/2 red onion, sliced

  • 1 tbsp olive oil

  • Salt & pepper

  • Lemon slices, for garnish

  1. Marinate the halibut: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, paprika, salt, and pepper. Rub mixture over halibut fillets and let rest for 10–15 minutes.

  2. Sauté the vegetables: In a large skillet over medium heat, add 1 tbsp olive oil. Cook zucchini, bell pepper, and red onion for 5–6 minutes, stirring occasionally. Add spinach and cook until just wilted (1–2 minutes). Season with salt and pepper.

  3. Cook the halibut: In a separate skillet (or the same one after veggies are done), sear halibut over medium-high heat for 3–4 minutes per side, or until cooked through and golden.

  4. To serve: Plate a bed of sautéed spinach and veggies, top with halibut, and garnish with a lemon slice or wedge.
