🐟 Ingredients
For the Halibut:
-
1 lb City Seafood STL Wild-Caught Halibut, cut into fillets
-
2 tbsp olive oil
-
1 lemon (zest and juice)
-
2 cloves garlic, minced
-
1/2 tsp paprika
-
Salt & black pepper, to taste
For the Veggies:
-
2 cups fresh baby spinach
-
1 zucchini, sliced into half-moons
-
1 red bell pepper, thinly sliced
-
1/2 red onion, sliced
-
1 tbsp olive oil
-
Salt & pepper
-
Lemon slices, for garnish
👩🍳 Directions
-
Marinate the halibut: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, paprika, salt, and pepper. Rub mixture over halibut fillets and let rest for 10–15 minutes.
-
Sauté the vegetables: In a large skillet over medium heat, add 1 tbsp olive oil. Cook zucchini, bell pepper, and red onion for 5–6 minutes, stirring occasionally. Add spinach and cook until just wilted (1–2 minutes). Season with salt and pepper.
-
Cook the halibut: In a separate skillet (or the same one after veggies are done), sear halibut over medium-high heat for 3–4 minutes per side, or until cooked through and golden.
-
To serve: Plate a bed of sautéed spinach and veggies, top with halibut, and garnish with a lemon slice or wedge.
