Ingredients:

1 lb City Seafood scallops, cleaned and patted dry

2 tbsp olive oil

1 tbsp melted butter

2 cloves garlic, minced

Zest of 1 lemon

Juice of ½ lemon

1 tbsp fresh parsley, chopped

Salt and freshly ground black pepper, to taste

Optional: red pepper flakes for a kick

Lemon wedges, for serving
Instructions:

Preheat your grill to medium-high heat. If using a grill pan, get it nice and hot.

In a small bowl, whisk together olive oil, butter, garlic, lemon zest and juice, parsley, salt, pepper, and red pepper flakes (if using).

Brush scallops on both sides with the marinade. Let them sit for 5–10 minutes.

Grill scallops for 2–3 minutes per side, until they’re opaque and have a nice sear. Don’t overcook—they should still be tender!
