Ingredients:
- 4 cod fillets (about 6 ounces each)
- 2 cups fish or vegetable broth (low sodium if possible)
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Olive oil (optional, for drizzling)
Instructions:
- Prepare the Poaching Liquid: In a large skillet or shallow pan, combine the fish or vegetable broth, minced garlic, bay leaf, and a few slices of lemon. Bring the mixture to a gentle simmer over medium heat. Season lightly with salt and pepper.
- Poach the Cod: Carefully place the cod fillets into the simmering liquid. The liquid should just cover the fillets. Adjust the heat if necessary to maintain a gentle simmer.
- Cook the Cod: Poach the cod fillets for about 8-10 minutes, depending on thickness, or until the fish is opaque and flakes easily with a fork. Be careful not to overcook.
- Serve: Using a slotted spatula, carefully remove the cod fillets from the poaching liquid and transfer them to serving plates.
- Garnish and Serve: Garnish the cod with fresh chopped parsley and a drizzle of olive oil, if desired. Serve immediately with additional lemon wedges on the side.

- Ensure the poaching liquid is just simmering, not boiling, to prevent the cod from overcooking and becoming tough.
- You can enhance the flavor of the poaching liquid by adding other herbs or spices such as thyme or paprika.
