Pan-Seared Walleye
by
Walleye is a mild, flaky white fish, making it a versatile base for a variety of recipes. Here's a simple, yet delicious Pan-Seared Walleye with Lemon Butter Sauce that really highlights the natural flavor of the fish:
Pan-Seared Walleye with Lemon Butter Sauce
Ingredients:
- 4 walleye fillets (skin-on or skinless)
- Salt and pepper, to taste
- 1/2 cup all-purpose flour (for dredging)
- 2 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, minced
- 1/4 cup white wine (or chicken broth)
- 2 tbsp fresh lemon juice (about 1 lemon)
- 2 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
Instructions:
-
Prepare the Fish:
- Pat the walleye fillets dry with paper towels. This helps get a crispy sear.
- Season both sides of the fillets with salt and pepper.
- Lightly dredge the fillets in flour, shaking off any excess.
-
Cook the Walleye:
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the walleye fillets to the pan. Cook for about 3-4 minutes on each side, or until golden brown and cooked through (the fish should flake easily with a fork). Remove the fillets from the skillet and set aside on a plate.
-
Make the Lemon Butter Sauce:
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the white wine (or chicken broth) and let it simmer for 2-3 minutes to reduce slightly.
- Stir in the lemon juice and cook for another minute. Taste and adjust seasoning with salt and pepper, if necessary.
-
Serve:
- Return the cooked walleye fillets to the pan, spooning the lemon butter sauce over the top. Let the fish warm in the sauce for a minute or two.
- Garnish with fresh parsley and serve with lemon wedges on the side.
Optional Sides:
- Roasted Vegetables (like asparagus, carrots, or Brussels sprouts)
- Rice Pilaf or Garlic Mashed Potatoes
- A simple green salad with a light vinaigrette
This recipe brings out the delicate flavor of walleye while adding the richness of lemon butter. It’s light, fresh, and perfect for a dinner by the lake or any occasion. Enjoy!
