Pan-Seared Walleye with Lemon Butter Sauce

Ingredients:

  • 4 walleye fillets (skin-on or skinless)
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1/4 cup white wine (or chicken broth)
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions:

  1. Prepare the Fish:

    • Pat the walleye fillets dry with paper towels. This helps get a crispy sear.
    • Season both sides of the fillets with salt and pepper.
    • Lightly dredge the fillets in flour, shaking off any excess.
  2. Cook the Walleye:

    • In a large skillet, heat the olive oil over medium-high heat.
    • Once the oil is hot, add the walleye fillets to the pan. Cook for about 3-4 minutes on each side, or until golden brown and cooked through (the fish should flake easily with a fork). Remove the fillets from the skillet and set aside on a plate.
  3. Make the Lemon Butter Sauce:

    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the white wine (or chicken broth) and let it simmer for 2-3 minutes to reduce slightly.
    • Stir in the lemon juice and cook for another minute. Taste and adjust seasoning with salt and pepper, if necessary.
  4. Serve:

    • Return the cooked walleye fillets to the pan, spooning the lemon butter sauce over the top. Let the fish warm in the sauce for a minute or two.
    • Garnish with fresh parsley and serve with lemon wedges on the side.
