Pan-Seared Chilean Sea Bass with Lemon Herb Butter

Ingredients:

  • 2 (6 oz) Chilean sea bass fillets (skin on or off—your choice!)

  • Salt and freshly ground black pepper

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • 1 clove garlic, minced

  • Juice of 1 lemon (plus extra wedges for serving)

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh dill, chopped

  • Optional: steamed asparagus or roasted baby potatoes for serving

Instructions:

  1. Pat dry the sea bass fillets with a paper towel. Season both sides generously with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Once hot, place the fillets skin-side down (if skin-on) and sear for about 4-5 minutes without moving them, until a golden crust forms.

  3. Carefully flip the fillets and lower the heat to medium. Add butter and minced garlic to the pan. Spoon the melting butter over the fillets as they cook for another 4–5 minutes, or until cooked through and flaky.

  4. Stir in lemon juice, parsley, and dill, letting the flavors blend in the warm pan for another 30 seconds.

  5. Serve immediately with a drizzle of the lemon herb butter from the pan. Add a side of asparagus or spring veggies for a fresh, vibrant meal.
