Halibut Tacos

Ingredients:
- 1 lb fresh halibut fillets
- 8 small corn or flour tortillas
- 1 avocado, sliced
- 1 cup shredded cabbage (green or purple)
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
For the marinade:
- 2 tablespoons olive oil
- Juice of 1 lime
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- For the sauce:
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon chopped fresh cilantro
- Salt to taste
Instructions:
- Prepare the marinade: In a small bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and pepper.
- Marinate the halibut: Place the halibut fillets in a shallow dish and pour the marinade over them, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes.
- Make the sauce: In another bowl, mix together sour cream or Greek yogurt, lime juice, chopped cilantro, and salt. Adjust seasoning to taste. Set aside.
- Cook the halibut: Heat a grill or a skillet over medium-high heat. Cook the halibut fillets for about 3-4 minutes per side, or until the fish flakes easily with a fork. Remove from heat and let it rest for a few minutes. Once rested, flake the fish into smaller pieces.
- Warm the tortillas: In the same skillet or on the grill, warm the tortillas for about 30 seconds on each side until they are lightly browned and pliable.
- Assemble the tacos: Place a few spoonfuls of flaked halibut onto each tortilla. Top with sliced avocado, shredded cabbage, diced tomatoes, and chopped cilantro. Drizzle with the lime-cilantro sauce. Serve with lime wedges on the side.
