🔥 Grilled Orange Roughy

Ingredients:

  • 4 orange roughy fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest (optional)

  • 2 garlic cloves, minced

  • 1 teaspoon dried oregano or thyme (optional)

  • Salt and black pepper, to taste

  • Lemon wedges, for serving

  • Fresh parsley, chopped (for garnish)


Instructions:

  1. Prep the Marinade:

    • In a small bowl, mix olive oil, lemon juice, zest, garlic, herbs (if using), salt, and pepper.

  2. Marinate the Fish:

    • Pat fillets dry with paper towels.

    • Brush the marinade over both sides of each fillet.

    • Let the fillets sit for 15–20 minutes while you preheat the grill.

  3. Prep the Grill:

    • Preheat grill to medium heat (about 375–400°F / 190–200°C).

    • Oil the grates well or use a fish grill basket or foil to prevent sticking (orange roughy is delicate).

  4. Grill the Fish:

    • Place the fillets on the grill.

    • Grill for 3–4 minutes per side, or until the fish is opaque and flakes easily with a fork.

    • Avoid flipping more than once, as the fillets are fragile.

  5. Serve:

    • Garnish with fresh parsley and lemon wedges.

    • Great served with grilled vegetables, rice pilaf, or a simple salad.


✅ Tips:

  • If you’re worried about the fillets breaking, grill them on foil or a cedar plank.

  • Don’t over-marinate—acid (lemon juice) can start to "cook" the fish if left too long.

  • You can add a touch of smoked paprika or chili flakes for a little kick.
