Ingredients:

4 orange roughy fillets (about 6 oz each)

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon lemon zest (optional)

2 garlic cloves, minced

1 teaspoon dried oregano or thyme (optional)

Salt and black pepper, to taste

Lemon wedges, for serving

Fresh parsley, chopped (for garnish)
Instructions:

Prep the Marinade:

In a small bowl, mix olive oil, lemon juice, zest, garlic, herbs (if using), salt, and pepper.

Marinate the Fish:

Pat fillets dry with paper towels.

Brush the marinade over both sides of each fillet.

Let the fillets sit for 15–20 minutes while you preheat the grill.

Prep the Grill:

Preheat grill to medium heat (about 375–400°F / 190–200°C).

Oil the grates well or use a fish grill basket or foil to prevent sticking (orange roughy is delicate).

Grill the Fish:

Place the fillets on the grill.

Grill for 3–4 minutes per side, or until the fish is opaque and flakes easily with a fork.

Avoid flipping more than once, as the fillets are fragile.
