Recipe: Creamy Butternut Squash and Scallop Risotto

This elegant yet comforting dish blends the sweetness of roasted butternut squash with the rich, buttery flavor of seared scallops. It’s fall comfort food elevated — and a perfect way to celebrate National Seafood Month!

Ingredients

  • 1 lb City Seafood sea scallops, patted dry

  • 1 small butternut squash, peeled and diced

  • 4 cups chicken or vegetable broth

  • 1 ½ cups Arborio rice

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup dry white wine

  • ½ cup grated Parmesan cheese

  • 2 tbsp butter

  • 2 tbsp olive oil

  • Fresh sage leaves for garnish

  • Salt and pepper to taste

Instructions

  1. Roast the squash:
    Preheat your oven to 400°F. Toss the diced squash in olive oil, salt, and pepper, then roast for about 25 minutes until tender and lightly caramelized.

  2. Make the risotto:
    In a large saucepan, sauté the onion and garlic in butter until translucent. Add Arborio rice and toast for 1–2 minutes. Pour in the white wine and stir until it’s absorbed.
    Slowly add warm broth, one ladle at a time, stirring frequently until the rice is creamy and cooked through (about 20 minutes). Stir in the roasted squash and Parmesan cheese.

  3. Sear the scallops:
    Heat olive oil in a skillet over medium-high heat. Season scallops with salt and pepper. Sear for about 2 minutes per side until golden brown and slightly crisp.

  4. Serve and enjoy:
    Spoon the risotto into bowls, top with seared scallops, and garnish with crispy sage leaves.
