Ingredients

For the Blackened Grouper:

  • 2 grouper fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Sandwich:

  • 2 brioche or ciabatta buns
  • 1 cup coleslaw (store-bought or homemade)
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Slices of tomato (optional)
  • Lettuce leaves (optional)
  • Pickles (optional)

Instructions

  1. Prepare the Spice Mix: In a small bowl, mix the paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and pepper.

  2. Season the Fish: Pat the grouper fillets dry with paper towels. Rub both sides of the fillets with olive oil, then coat them generously with the spice mix.

  3. Cook the Grouper: Heat a cast-iron skillet over high heat until it’s very hot. Add the fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest for a minute.

  4. Prepare the Slaw: In a bowl, combine the coleslaw, mayonnaise, and lemon juice. Mix well and set aside.

  5. Assemble the Sandwich: Toast the buns if desired. Place a lettuce leaf on the bottom half of each bun. Top with a blackened grouper fillet, a generous scoop of coleslaw, tomato slices, and pickles if using. Cap with the top half of the bun.

  6. Serve: Serve immediately with your favorite side, like fries or chips.
