Blackened Grouper Sandwich
Ingredients
For the Blackened Grouper:
- 2 grouper fillets (6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (adjust for spice preference)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Sandwich:
- 2 brioche or ciabatta buns
- 1 cup coleslaw (store-bought or homemade)
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- Slices of tomato (optional)
- Lettuce leaves (optional)
- Pickles (optional)

Prepare the Spice Mix: In a small bowl, mix the paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and pepper.

Season the Fish: Pat the grouper fillets dry with paper towels. Rub both sides of the fillets with olive oil, then coat them generously with the spice mix.

Cook the Grouper: Heat a cast-iron skillet over high heat until it’s very hot. Add the fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest for a minute.

Prepare the Slaw: In a bowl, combine the coleslaw, mayonnaise, and lemon juice. Mix well and set aside.

Assemble the Sandwich: Toast the buns if desired. Place a lettuce leaf on the bottom half of each bun. Top with a blackened grouper fillet, a generous scoop of coleslaw, tomato slices, and pickles if using. Cap with the top half of the bun.
