Andouille Sausage and Potato Skillet

Ingredients:

  • 1 lb andouille sausage, sliced into rounds
  • 4 medium potatoes (Yukon Gold or Russet), peeled and diced into small cubes
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional for heat)
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup chicken broth (or water)
  • Fresh parsley (for garnish)
  • 1/4 cup shredded cheddar cheese (optional, for topping)

Instructions:

  1. Cook the Potatoes:

    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt, pepper, smoked paprika, and thyme. Cook the potatoes for about 10-12 minutes, stirring occasionally, until they start to soften and turn golden brown. If they start to stick to the pan, add a splash of chicken broth or water to deglaze and prevent burning.
  2. Add the Andouille Sausage:

    • Push the potatoes to the side of the skillet. Add the sliced andouille sausage to the same pan. Cook for about 5-6 minutes until the sausage is browned and crispy on the edges.
  3. Sauté the Veggies:

    • Add the onion, bell pepper, and garlic to the skillet with the sausage. Cook for about 5-7 minutes, until the veggies are softened and fragrant.
  4. Combine and Simmer:

    • Once the veggies are softened, stir everything together. Add the chicken broth (or water) and cook for another 5 minutes, letting the flavors meld and the liquid reduce slightly.
  5. Finish It Off:

    • Taste and adjust seasonings (salt, pepper, cayenne). If you like, sprinkle some shredded cheddar cheese on top and let it melt for an extra cheesy finish.
    • Garnish with fresh parsley before serving.

Tips:

  • You can use any kind of potatoes you like, but Yukon Gold or Russet work well for a crispy texture on the outside and fluffy interior.
  • If you prefer a spicy kick, feel free to bump up the cayenne or add a dash of hot sauce at the end.
  • You could even top this skillet with a fried egg for a more decadent breakfast or brunch dish!

So simple but world class.  This is a one-pan wonder that’s super comforting and packed with flavor.
