Andouille Sausage and Potato Skillet
Ingredients:
- 1 lb andouille sausage, sliced into rounds
- 4 medium potatoes (Yukon Gold or Russet), peeled and diced into small cubes
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional for heat)
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/2 cup chicken broth (or water)
- Fresh parsley (for garnish)
- 1/4 cup shredded cheddar cheese (optional, for topping)
Instructions:
-
Cook the Potatoes:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt, pepper, smoked paprika, and thyme. Cook the potatoes for about 10-12 minutes, stirring occasionally, until they start to soften and turn golden brown. If they start to stick to the pan, add a splash of chicken broth or water to deglaze and prevent burning.
-
Add the Andouille Sausage:
- Push the potatoes to the side of the skillet. Add the sliced andouille sausage to the same pan. Cook for about 5-6 minutes until the sausage is browned and crispy on the edges.
-
Sauté the Veggies:
- Add the onion, bell pepper, and garlic to the skillet with the sausage. Cook for about 5-7 minutes, until the veggies are softened and fragrant.
-
Combine and Simmer:
- Once the veggies are softened, stir everything together. Add the chicken broth (or water) and cook for another 5 minutes, letting the flavors meld and the liquid reduce slightly.
-
Finish It Off:
- Taste and adjust seasonings (salt, pepper, cayenne). If you like, sprinkle some shredded cheddar cheese on top and let it melt for an extra cheesy finish.
- Garnish with fresh parsley before serving.
Tips:
- You can use any kind of potatoes you like, but Yukon Gold or Russet work well for a crispy texture on the outside and fluffy interior.
- If you prefer a spicy kick, feel free to bump up the cayenne or add a dash of hot sauce at the end.
- You could even top this skillet with a fried egg for a more decadent breakfast or brunch dish!
So simple but world class. This is a one-pan wonder that’s super comforting and packed with flavor.
